I would like to say one simple tool "BeyondInbox". It provides features like backup of your Imap/Gmail account, Archive your email,Organize your inbox,Transfer your email to another account and Restore your email.
BeyondInbox create a separate file(.eml) for each mail. http://www.beyondinbox.com/documentation/mail-backup--how-to-backup-emails-from-imap-account.html

I don't use Google Apps sync, so I can't help more on that.

Have you tried File, Info, Account Settings, select your email account from the next window that appears, go to More Settings, then make sure the Reply Email is from the email address you want shown?

The specific problem I'm having is that the "Google Apps Sync for Microsoft Outlook" doesn't let me change the "from" address. The browser-based setting (at "mail.google.com/mail/?shva=1#settings/accounts") correctly handles messages generated from the browser, but not from Outlook.

I would like what I consider "the best of all worlds:" a) to use Outlook to create and read mail (and manage contacts and calendar), b) to use Google Apps (rather than gmail or Exchange), and c) to use my gmail address. The problem I'm having is when I use the Google Apps OL connector (so that my contacts and calendar are managed), I cannot change the default "from" setting in OL.

We have coded an online migration tool that takes care of email migration:

<a href="http://improffice.com/emailtransfer" title="http://improffice.com/emailtransfer" rel="nofollow">

It works with any IMAP server but it was designed with Gmail and Google Apps users in mind.

Francis, thanks for your success story. When you migrated your email via Outlook were the original dates of your emails preserved?

What I did when I migrated from GMAIL to Google Apps Mail is that I set both up in Outlook (or Entourage).. GMAIL being set up in POP while Google Apps in IMAP... then literally do a cut-and-paste from GMAIL's inbox to Google Apps' inbox and leave it... in no time (or in my case, 6 years' worth of email), I was able to move my email to the new address..
